Using whiskey barrels shipped all the way from the Jameson Distillery in Midleton, Ireland, Bale Breaker Brewing Company has created a limited edition brew you won’t want to miss. Ossifier Stout 

“We took our flagship stout recipe—Dormancy Breakfast Stout—and edited it to take on a more traditional stout personality, something that would be a great canvas for the whiskey and wood flavors from the Jameson barrels. Ossifier Stout is a full bodied, pronounced aroma and flavor intensity. Secondary flavor and aromas may include dried fruits, toffee, molasses, raisin, vanilla, and smoke. “Based off our flagship winter seasonal—High Camp Winter IPA—we adapted the recipe to make the perfect canvas that would welcome the whiskey and wood flavors from the Jameson barrels. Moderate aroma intensity. Balanced hop and malt aromas with notes of caramel, dark malt, coffee, citrus, pine, and spice. Malt and hops are balanced on the palate as well with primary flavors of chocolate, pine, and rye. Secondary flavors and aromas include dark fruits, grass, dank resin, and smoke. Balanced sweetness and medium-full body with moderate bitterness.”

"The Yakima Valley is a beautiful place—200 days of sunshine, access to mountains and rivers, and of course, incredible farmland to grow 75% of America’s hops.Thanks to our proximity to the hop fields, we are able to select the best hops for our beers, and that care and freshness comes to life in every barrel of beer we make. We built Bale Breaker in the middle of one of our family’s hop fields in 2013. Our dad always said that when you grow up on a hop farm, hops are in your DNA. And we think that’s true. The Yakima Valley is our home, and has been for four generations. We hope the fifth generation feels as strong of a connection to Yakima as we do."
