The sun coming out in Ireland is such a special event, it deserves special summer cocktails.
And you can’t get more special than some ginger drinks made with lime, sugar, Jameson Irish Whiskey and pomegranate – a hugely popular fruit on the stalls of Dublin’s historic Smithfield market nowadays. Whether you’re having a BBQ or just a bunch of friends round to celebrate the sun, a big bowl of punch is easy to prepare and will provide you all with party drinks till the sun goes down for another day, or year.
- ½ bottle of Jameson
- 1 litre of pomegranate juice
- 50g of chopped ginger
- The zest and juice of 3 limes
- 50g of sugar
- 250ml of ginger beer Pomegranate seeds
- Sliced limes
- Combine 1 litre pomegranate juice, 50g chopped ginger, zest and juice of 3 limes and 50g sugar into a blender.
- Blend everything up and sieve the mixture into a jug.
- Add ½ bottle Jameson and 250ml ginger beer.
- Serve in a short glass over ice.
- Garnish with lime slices and pomegranate seeds
