Cooper's Tea

When John Jameson’s hardworking coopers were taking apart old barrels, they’d hide the last little drop of whiskey in an innocent-looking teapot for themselves. Summer cocktails aren’t usually named in honour of 200-year-old traditions but this refreshing drink is different. For one thing, while predominately an apple juice recipe, tea actually plays a big part in creating its unique taste. Serving 10-12 people and including Jameson Irish Whiskey, honey and cucumber, this is a perfect party drink that will surprise as many as it satisfies.

  • 1 Bottle of Jameson
  • 2 cucumbers, sliced
  • 8 Irish Breakfast teabags
  • 2 litres of pressed apple juice
  • 1lb jar of honey
  • 1 jar of boiling water (use honey jar)
  • The zest & juice of 4 lemons
  • A handful of mint leaves
  • Fill a cocktail shaker with 8 Irish Breakfast teabags, and the zest and juice of 4 lemons.
  • Add 1lb jar of honey and jar of boiling water (use the honey jar) and shake.
  • Place 1 sliced cucumber in a bowl with apple juice and stir.
  • Leave both mixes to sit for an hour.
  • Sieve both into a new bowl.
  • Add 1 bottle of Jameson and mint leaves.
  • Serve in short glasses over ice.
  • Garnish with remaining cucumber slices.
