Bartender Christos brings us the Jameson Trail cocktail - a multi-layered drink with a spicy touch of fifty shades of sage.

60 ml Jameson Original
15 ml pimento dram
35 ml dry sage syrup with infused with cooked chilli flakes into an apple vinegar and honey
25 ml fresh lemon juice
2 dashes peach bitters
Fresh sage
Nutmeg (for decoration)

Add all ingredients (except nutmeg) to a cocktail shaker with ice
Shake and double strain
Serve in a coupe glass and sprinkle with nutmeg
